Harvested intentionally early in ’13, the first step of this sparkling wine was to make a still Viognier. In spring ’14 it was tiraged bottled, and the bubbles were born. Broken into three lots, the final disgorgement was in March ’20. After six years en tirage, this sparkling wine has a clean mango and stone fruit nose. On the palate, there is ample weight, acid, and length with flavors of pomelo, key lime pie, graham cracker crust, and shortbread. Extremely effervescent bubbles shoot out aromas of Asian pear, lemon zest, gardenia, and the slightest hint of guava tropicality. The bubbles are soft on the sip, carrying honeydew and sharp lime flavors. A very special occasion sparkler!
