Here’s a new wine from a new vineyard site we had planted for us 4 years ago. It sits on a rocky, clay soil, and we had Grenache and Tannat planted. The goal is to co-ferment these two wildly different varieties – some experiments with here two grapes in our home vineyard lead us to believe it could make a cool wine.
As the vines are very young, we decided a rosé would be the best course of action.
Both varieties were picked together and whole cluster pressed into flextank for spontaneous fermentation. The wine went through malolactic as well. After fermentation, we racked the wine into a combo of tank and puncheons for aging.
