Hibou Wines

Located three hours north of San Francisco in the steep slopes of northern Mendocino County sits Alder Springs Vineyard. Stu Bewley planted the first block in 1993. The coastal influence combined with the steep slopes and high elevation yields some pretty spectacular fruit. I feel so lucky to be able to source not only Pinot Noir, but Syrah and Viogner from this site. I ferment the Pinot Noir with 33% whole clusters using only native yeasts. The wine is aged in 20% new French oak for 10 months before bottling. As for the Syrah, I use 100% whole clusters and conferment the lot with 5% Viogner. The wine was aged in 50% new French oak for 10 months
