ROMA’S HISTORY

 2004 Minnesota State Champion Chef Brent Pilrain (left) and brother Brian Pilrain, Brewer & Master Butcher opened Roma in the Spring of 2006 then called, “Roman Market” – a family business along with parents Dave and Joy. Roman Market was a small retail meat market and deli serving prime steaks, big deli sandwiches, and a small catering menu of European family-style favorites. In the Spring of 2008 the space next door became available and an 80-seat restaurant and bar were built. We became ROMA Restaurant. A few years later the market was remodeled to expand the kitchen and make room for the increase in house-made desserts and busy catering business. The fresh meat station stayed and continues to provide ground beef and house-made meatballs, sausage, steaks, and other cuts to the restaurant daily. In 2011 an opportunity to open a second restaurant, “Patriots Tavern” in Stillwater’s Liberty Village was realized and Brent’s passion for hearty colonial american cuisine was brought to life. In 2016 ROMA moved into the former Wildwood Bowl building at the end of the block and have now increased our seating capacity along with the addition of an on-site nano-brewery and our original market and deli! ~Cheers
