Ten years in the making, our red blend is like no other. Driven to make a big red from a cool climate, we’ve had to seek out unusual grape varieties, learn how to grow them and learn how turn them into great wine. This blend is not based on a traditional blend, like a Rhone blend or a Bordeaux blend, nor is it a happenstance field blend. To make our blend, I started with a clean slate, stood in the vineyard and worked my way forward. Using my 35 years of experience, I’ve carefully calculated and crafted a wine that is great with savory meats and a highly suitable alternative (not substitute) to Napa Valley Cabernet – our wine counterpoints the rivals with greater aromatics and a velvety texture. The wine is a blend of 40% Dornfelder, 35% Tannat, 15% Cabernet Sauvignon and 10% Syrah. We call this wine Aero Bos which means flying cow. We thought the name was appropriate given that it’s a great steak wine and the grapes originate from far-flung locations.
