Tonight we are tapping another fun experiment that delves into the wide world of hoppy goodness.
THUMB WRASTLIN’ IPA takes several approaches to brewing and combines them to make something reeeal nice.
This beer showcases a new yeast called Star Party, which is a yeast that’s engineered to unlock Thiols–the hottest thing in hoppy beers at the moment.
We coaxed out these ultra rich flavor compounds by first building a grain bill around the potential thiol-laden power of certain malts, then we mash hopped with Saaz and Cascade hops. After the boil, we introduced Citra Incognito into the fermenter while cooling the pre-fermented beer on its way to the fermenter.
This yeast got to work producing deep layers of stonefruit, passionfruit, guava, and super dank hop notes before any hops even hit the fermenter in the form of dry hopping. To compliment those notes, we dry hopped this one with 100% Nelson Sauvin for a powerful white wine, gooseberry aroma. A beautiful blend of orange, peach, gooseberry, and passionfruit.
