Complex, fruity, pleasantly sour and dry “wild” beer fermented under many moons by a sequence of four different yeast strains (two Saccharomyces, two Brettanomyces ) and two bacteria cultures (Lactobacillus, Pediococcus) followed by a long period of slow maturation over a bed of organic tart cherries.
