Inspiration doesn’t always come easy. In all walks of life, obligations can pile up and feel overwhelming and when that happens it’s easy to lose sight of the beautiful things that are right in front of us. It takes a conscious effort in these moments to pause, to reflect and to re-discover inspiration. Today we introduce a beer that’s all about that process of self reflection and a reminder of the beauty that’s right in front of us.

Colorado Saison with Wildflower Honey and Brettanomyces
6.1 ABV
The choice to open our brewery in Colorado was a very intentional one, we are blessed to live in a place with endless beauty and literal mountains of character. This has always been a place that we find joy and meaning and today we’re celebrating our beautiful home with a Saison that captures pieces of its essence. We started with a base built from @troubadormaltings Colorado barley, we used a blend of their Serenade and Ballad malts to create a light, yet robust backbone of sweet and grainy flavors that are present from start to finish. To lend additional nuance, we added a copious amount of Colorado Wildflower Honey from Bee Squared Apiaries to add deep notes of butterscotch alongside bright and vibrant floral and citrus notes. We layered in Colorado aged hops to impart notes of grass and earth and fermented it with a blend of saccromyces and brettanomyces yeasts to bolster the rustic characteristics of this beer, reminding us of is agrarian origins. All of these flavors come together in a beautiful confluence that is bursting with nuance and drinks perfectly for the many sunny days ahead.
